Spicy Garlic Greens (with a little pasta)

This is one of my “go to” meals when I am cooking by myself and I want something quick and delicious. I recommend trying this!

6 oz spaghetti

Save 1/2 C pasta water

@ 1-3 Tb Olive oil

4 garlic cloves (sliced thinly)

1 Tb red pepper flakes and more to taste

1 large bunch of lacinato kale or baby kale (chopped)

2 tb lemon zest

Pepper

Juice of 1/2 lemon

Lemon wedge

Vegan Parmesan or vegan “Italian mix” cheese for serving

Prepare

Prep pasta according to the package instructions. Rinse and save 1/2 cup of pasta water.

Put a little oil in a skillet and add the garlic and red pepper flakes.  Sauté until garlic is a little browned.   Add the kale and continue to sauté until the kale is wilted.  Add the pasta, a little pasta water, the lemon juice & the zest.  Add more if too dry & pepper and more red pepper to taste.  Plate the dish and garnish with lemon wedge, and sprinkle with vegan Parmesan.
