Magical Chia Seed Jam
The first thing we should all do when shopping on the “inner aisles” of the grocery store is look at the ingredient list. I think the most shocking lists are in the jam aisle. Often SUGAR is the first or second ingredient. Yikes! This is why I love Oh She Glows’ Magical Chia Seed Jam recipe. It is easy to make and you can feel good about the ingredients. I love it on morning toast. Thankfully, my kids love it on their PB&J too!
Magical Chia Seed Jam By: Oh She Glows
3 C Fresh Raspberries
3-4 T Pure Maple Syrup
2 T Chia Seeds
1 t Pure Vanilla Extract
In a medium saucepan, combine the berries and 3 T of the maple syrup and bring to the simmer over medium to high heat, stirring frequently. Reduce the heat ro medium-low and simmer for about 5 minutes. Lightly mash the berries with a potato masher or fork, leaving some whole for texture. Stir in chia seeds until thoroughly combined and cook, stirring frequently, until the mixture thickens to your desired consistency (or about 15 minutes). Once the jam is thick, remove from the heat and stir in the vanilla. Add more sweetener to taste. Keep in an airtight container in the fridge for 1-2 weeks.
