Rice and Beans Bowl (with a "seasoned" twist)!
My daughter loves rice and beans, but it can get boring. This is a great (simple) recipe to mix things up. She loves the seasoned beans!
Ingredients:
1/2 C cilantro
3 T lime juice
1 T lime zest
1 Can pinto beans
1 T garlic powder
1/2 T oregano leaves
1/2 T paprika
1/2 T chili powder
salt and pepper (to taste)
1 red bell pepper (sliced)
1 avocado (sliced)
2 sweet potatoes (cubed)
2 C brown rice
optional: jalapeños, any leafy greens
Directions:
Pre-heat oven to 400.
Spread sweet potatoes and peppers on baking sheet and bake at 400 for @ 30 minutes.
Cook rice, then add lime zest, lime juice and cilantro.
Mix beans with paprika, chili powder, garlic powder, oregano, salt and pepper. Bake at 400 for @ 10 minutes.
Assemble the bowl: add rice, beans, avocado, sweet potato and red pepper. Top with jalapeños, greens, and salt/pepper to taste.
