Banana Bread
Inspired by Hummusapien
We LOVE this easy banana bread and make it whenever we have a few over ripe bananas on hand. If you do not follow the amazing Hummusapien yet, please do now! She is up there with Minimalist Baker and Oh She Glows with always providing “winners” when she shares her recipes.
Ingredients:
1/4 C Vanilla almond milk
1 t Apple cidar vinegar
3 C Overripe bananas (6 large bananas)
1/2 C Maple syrup
1/4 C Avocado oil
1 t Vanilla extract
2 C Gluten free baking flour
1 t Baking soda
1/2 t Sea salt
1/2 t Cinnamon
Directions:
Preheat oven to 350. Line a loaf pan with parchment paper and spray lightly with olive oil. Place almond milk and apple cider vinegar in a small bowl and stir. Place bananas in a large mixing bowl. Mash them well and then add the syrup, oil and vanilla; stir. Add the almond milk mixture; stir. Add the flour, baking soda, salt and cinnamon; stir. Pour into pan and bake for @ one hour, 15 minutes. Make sure a fork comes out clean. If you do not want it to get too brown, put a piece of foil on top after baking for 50 minutes. Once done, carefully remove from the pan and place on a wire rack to cool before slicing.
